This Week's Recipe: Birthday Cake

Why Birthday Cake?

Happy Birthday foodbyjessica!
Today is one year since I started my blog and what better way to celebrate with the classic cake.
It has been a great year of recipes and taking on this new adventure of sharing them with you. I hope to take my journey further and write more reviews and articles so stay tuned.
Thank you to all my readers.
Happy eating!

Ingredients:
125g soft butter
2/3 cup caster sugar
2 eggs
1 tsp vanilla essence
2 cups self raising flour
2/3 cups milk
Icing:
75g soft butter
1/2 cup of sifted icing sugar
1 tsp vanilla essence
1-2 drops of your choice of food colouring

Method:
Beat butter and sugar in a mixer until light and fluffy and slowly add the vanilla and eggs. Mix until well incorporated.

Add the sifted flour and milk alternatively until batter is smooth and silky. Pour into a greased tin and cook for 45 minutes at 180 degrees Celsius (or until a skewer comes out clean).
Allow to cool and cut into desired shape.

Icing:
Beat all ingredients together until the butter is light in colour and at least tripled in size. Add the food colouring and mix well.
Spread over the cake with a butter knife and decorate as desired.

Serves 1-12 (depending on how greedy you are)

Bon Appetite
