Tomato + mozzarella salad with blood orange, cumin and caraway dressing


Eating for the season; is what this salad is all about. A few ingredients tossed together with carefully  paired flavours.

500g mixed vine ripened tomatoes, cut into wedges
250g fresh mozzarella, torn
100g rocket leaves
basil leaves, to serve
Blood orange, cumin + caraway  dressing
1 tsp each coriander and caraway seeds, toasted
juice from 1 blood orange
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil



1. To make the dressing, place the coriander and caraway seeds in a mortar and pestle and grind until roughly crushed. Add the orange juice, vinegar and oil. Season well with salt and pepper and mix well.

2. Place the tomatoes in a large bowl. Season with salt and pour over half the dressing. Set aside to macerate for 5 mintues.

3. Arrange the rocket, tomatoes and mozzarella between 4 plates. Top with basil leaves and spoon over extra dressing.

Serves 4.
