W...I could taste this as soon as I read the recipe. We love the 'earthy magenta root' and often dry roast them on a bed of rock salt. But I always missed the pickled flavour of the tinned variety (the baby beets in tins are actually very good), and sometimes served my sliced beetroot dressed with a little good vinegar. So as soon as I saw this recipe I knew it would be a winner and indeed it was. I'm in your debt.
