
It has to be said; the Italians know their food. From olives and cheese to fresh pasta. However besides all the savoury, Italians are also know their stuff when it comes to the sweet side of life. Think tiramisu, zabaglione, amoretti and biscotti, all delicious.
Savoiardi are light sugar crusted sponge biscuits best enjoyed next to an espresso, or the key component in desserts such as tiramisu.
A great tiramisu is the result of the best Savoiardi and not your average sponge.
I unfortunately do not live in Italy, and do not have the lifestyle in which to accommodate the expenses of my finer required Italian tastebuds and worse yet nor does my local super market.
The closest equivalent is an unfilled sponge cake.
Instead of being deprived I have come up with a cheats version of Savoiardi and here I will share it with you.
Ingredients
1x 190g store bought unfilled sponge cake
1/2 cup Grand Marnier
1 teaspoon caster sugar
Icing sugar to dust
Method
Preheat oven to 100°C (80°C fan forced).
In a small saucepan heat the Grand Marnier and sugar until the sugar dissolves, take off the heat and allow to cool.
In the meantime cut the sponge horizontally in half and slice into 1.5 cm lengths. Cut each length into 5cm pieces.
Line a baking tray with baking paper and lightly dust with icing sugar.
Pour the Grand Marnier into a shallow dish or large plate. Lightly and gently dip each sponge finger into the alcohol and place soggy side up. Continue until all sponge fingers are dipped.
Dust with plenty of icing sugar and bake for 20 minutes, or until the tops feel dry.
Serve with coffee or liqueur or use in your favourite Italian desserts.
Makes 26.
Store in an airtight container for up to a month.

I buy my Savoiardi at Coles in Ashfield. I can't remember the brand but they come in a yellow packet and are pretty delish!

You are lucky to have found Savoiardi at your local supermarket. Unfortunately I am not as lucky and am happy to have my cheats version!
